Mustard Chutney

Ingredients:
Yellow mustard powdered - 3 tbsp
Curd - 4 tbsp
Green chillies - 2
Garlic clove - 2
Tamarind paste - 1/2 tbsp
Salt to taste
Mustard oil - 1 tbsp

Preparation:
Mix all the ingredients except mustard oil and salt in the grinder till it turns into a smooth paste, sauce like consistency. Now add salt and oil. Serve with stuffed parathas or samosas.

Tangy Capsicum Masala

Ingredients:

500g Fresh Capsicum , cut into 1/2 inches

3 Fresh Tomatoes chopped

3-4 Green Chillies , slit

1/2 tsp asafoetida

1 1/2 tsp mustard paste

1/2 tsp coriander powder

1/2 tsp red chilly powder

1/2 tsp turmeric powder

2 tablespoon mustard oil

1/2 tsp black mustard seeds

1 tsp aamchur powder

Salt as per taste



Method:


  • Heat oil in the pan

  • Add asafoetida and mustard seeds

  • Once the mustard seeds start spluttering add green chillies

  • Now add mustard paste, coriander powder, red chilly powder and turmeric powder and fry till it becomes brown

  • Add chopped tomatoes and salt , cook till tomatoes become soft

  • Now add capsicum and fry till it becomes soft

  • Add aamchur powder and fry for 5mins

  • Serve hot with puris

Pungent Okra Curry ( Okra = Bhindi )

Ingredients :

500g fresh tender okra , cut into 2 inch pieces

2 medium size onion, finely chopped

2 small tomatoes , finely chopped

2 green chillies chopped

1 tsp garlic paste

1 tsp mustard powder

1/2 tsp cumin powder

1/2 tsp coriander powder

1/2 tsp red chilly powder

1/2 tsp turmeric powder

1/2 tsp cumin seeds

1 tablespoon oil

Salt as per taste


Method:

  • Mix garlic paste, mustard powder, cumin powder, coriander powder, red chilly powder and turmeric powder in a small bowl with water to make a thick paste and keep it aside

  • Heat oil in a pan

  • Add cumin seeds to the oil and let it splutter

  • Now add green chillies and onion and fry till golden brown

  • Add the paste kept aside in the bowl and fry till brown

  • Now add chopped tomatoes and salt to the fried paste and fry till tomatoes become soft

  • Add okra and fry till it becomes soft

  • Now add water and cook on low heat for 10 mins till it appears cooked.

  • Serve hot with rice or parathas
